5 Signature Dishes! Representatives of “The Marvel of Chanthaburi Flavors” to the National Stage in the “1 Province 1 Menu, Honoring Local Food” project

On May 26, 2025, Chanthaburi Province held an important meeting to select local food menus to represent the province in the “1 Province 1 Menu, Honoring Local Food” project for the 2025 fiscal year. Mr. Somporn Kanchanirun, Deputy Governor of Chanthaburi Province, presided over the meeting, along with committee members from government, private sector, and universities in the area, at Neun Wong Meeting Room, 1st Floor, Chanthaburi Provincial Hall.

The main objective of this meeting was to find food menus that most clearly reflect Chanthaburi’s cultural identity and local wisdom, taking into account standards of quality, taste, uniqueness, and importantly, sustainable use of local resources.

From a total of 20 food menus submitted for consideration, the committee carefully deliberated and selected 5 outstanding menus that will be the pride of Chanthaburi residents and are ready to advance to the national stage 1 Province 1 Menu, as follows:

5 Top Menu Representatives of Deliciousness from Chanthaburi Advancing the 1 Province 1 Menu, Honoring Local Food” project

  • Gaeng Keaw (Green Curry): A unique curry dish. It might be a curry cooked with local herbs or have ingredients that give it a distinctive color, making it interesting in both taste and story.
  • Hoi Chong (Chong Clams): A menu name that invites exploration. It is presumed to be a dish prepared from fresh seafood clams, a famous ingredient of Chanthaburi, and may have ancient cooking methods passed down through generations.
  • Kuay Tiao Pad Nam Kung (Stir-fried Noodles with Shrimp Gravy): A special stir-fried noodle dish because of its “shrimp gravy,” which might be a seasoning liquid extracted from fresh shrimp, resulting in a rich, aromatic shrimp flavor that is unique.
  • Kuay Tiao Moo Liang Sen Chan (Stewed Pork Noodles with Chanthaburi Noodles): This menu is already well-known and famous in Chanthaburi. Its selection this time emphasizes the distinctiveness of both “Moo Liang,” which has a specific cooking method, and “Sen Chan,” a particularly soft and chewy local noodle.
  • Look Prasak Chuam (Preserved Prasak Fruit): A rare local dessert, demonstrating the wisdom of processing local fruits or vegetables into a delicious and valuable sweet treat, indicating the diversity of resources in Chanthaburi.

Ms. Manussri Tanlai, Chanthaburi Provincial Cultural Officer, as a committee member and secretary, along with Miss Patchara Seenual, Director of the Strategy and Cultural Monitoring Group, and government officials from their respective agencies, conducted the meeting smoothly according to the agenda. They will expedite the submission of information for these 5 food menus to the Department of Cultural Promotion for further action 1 Province 1 Menu.

This “1 Province 1 Menu, Honoring Local Food” project is not only about promoting local food to a wider audience, but also about preserving invaluable cultural heritage and adding value to Chanthaburi Province’s local resources, which will lead to sustainable development in the future.
