Have you ever imagined that a single dish could be the key to transforming an entire province?
On the eastern coast of Thailand, a small but vibrant province is redefining its future through something it has always had—local food. In Chanthaburi, food is more than just a source of nourishment. It is culture, wisdom, and a powerful tool for sustainable urban development.
On April 4, 2025, Chanthaburi took a major step forward by preparing its application to join the UNESCO Creative Cities Network (UCCN) in the field of Gastronomy—affirming its commitment to becoming a city where food drives innovation, cultural exchange, and inclusive growth Chanthaburi Gastronomy.

Chanthaburi Gastronomy – A Taste That Connects Cultures and Tourism
At the heart of this movement lies the project “Mahat Sa Chan of Flavor – Chanthaburi Gastronomy”, which positions food not just as something to eat, but as a medium to connect communities, farmers, chefs, travelers, and the world with the authentic soul of Chanthaburi.
The province is blessed with a rich variety of high-quality ingredients: seasonal tropical fruits, indigenous herbs, fresh seafood, and medicinal plants with the potential to be developed into functional food that promotes well-being.
This ecosystem is developed holistically—from upstream producers and organic farmers to downstream local chefs and restaurants, all the way to tourists who seek unique culinary experiences.
A Nationwide Agenda Powered by Local Flavor
The movement is fueled by a collective effort from all sectors. Ms. Darunee Thammaphodol, Advisor to the Ministry of Culture and Chair of the National Creative Cities Steering Committee, led a delegation to meet with Mr. Somporn Karnnijnirand, Deputy Governor of Chanthaburi, to discuss plans for organizing international activities and preparing the city’s UNESCO application.
The meeting also explored opportunities to seek support from the ASEAN Cultural Fund to ensure continuity and integration of the creative gastronomy (Chanthaburi Gastronomy) initiative into the province’s long-term development strategy.
“Sook Took Wan Tee Chanthaburi” – More Than a Slogan, A Way of Life
Chanthaburi’s development through gastronomy is not limited to taste—it aims to revitalize local economies, create jobs, and attract visitors who wish to experience a living culture.
Every dish served in Chanthaburi tells a story—of its people, its past, and the seamless connection between tradition and innovation. It is a fusion of local ingredients and modern creativity, of ancient wisdom and youthful ambition.

A Future Rooted in Pride
On the same day, a rain tree (Chamchuri), once presented by His Majesty King Rama IX to be planted in Chanthaburi, was replanted as a symbolic gesture. It stands not just as a tree, but as a living symbol of the roots that connect the past, present, and future of a city growing with creativity and purpose.
Chanthaburi is not just a city of “deliciousness”—it is profound, meaningful, and valuable in every sense. And today, this city of flavor is beginning to share its voice with the world Chanthaburi Gastronomy.
