Chanthaburi Province is making a concrete move toward becoming a global Gastronomy hub with the launch of the significant project, “Roots of Flavors to the World’s Creative Kitchen.” This initiative brings together culinary experts and creative city networks from across the country to elevate the value and international recognition of local food.
Opening the Door to a Creative Food City: “Roots of Flavors to the World’s Creative Kitchen” Chanthaburi
On August 14, 2025, at the Blue Rabbit Hotel in Mueang Chanthaburi District, the official opening ceremony for the project was held, presided over by Mr. Montasit Phaisalthanawat, Governor of Chanthaburi Province. The project, running from August 13-15, 2025, serves as a platform for sharing knowledge and experiences among food and culture experts from various sectors, including government, private, and academic institutions.
Over 50 participants from diverse organizations attended the event. These included representatives from UNESCO Creative Cities for Gastronomy in Phuket, Phetchaburi, Chiang Rai, and Suphanburi, as well as various experts who exchanged perspectives on sustainably developing Chanthaburi into a Creative Food City.

Highlights: Symposium and Field Study
This project went beyond theoretical lectures, giving participants hands-on opportunities to learn from real-world examples. Roots of Flavors to the World’s Creative Kitchen
- Symposium: Experts from different creative cities held a discussion on the topic, “Culinary Heritage and Innovation for Becoming a Creative Food City.” They presented concepts and innovations that can be adapted to develop the potential of Chanthaburi’s food to a global level.
- Field Visit: Participants visited the Medical Sciences Department’s Herbal Garden and Suthee Organic Farm in Makham District to learn about local herbs such as pepper, cha-muang leaves, and white turmeric, as well as organic farming—a crucial foundation for high-quality Chanthaburi local food.
- Creative Menu Workshop: A cooking demonstration workshop showcased how to creatively blend local ingredients and herbs like mapid and cardamom into modern dishes, highlighting the unlimited potential of delicious food in Chanthaburi.
A New Dimension of Sustainable Development
Beyond taste and uniqueness, Chanthaburi’s Gastronomy development also emphasizes community participation and sustainability. The focus is on the Zero Waste concept to minimize environmental impact, a key philosophy that will truly make Chanthaburi’s food recognized on the international stage.
